“Dressing Rehearsal” at Whole Foods Market Tucson-River Rd & GIVEAWAY

The holidays in our house look a little bit different this year.  Now that we know The Toddler has an amazing array of food allergies that make baking an absolute nightmare…. Until now!  I am going to share one of my finds that has made our lives just a little bit sweeter-just in time for the holiday season no less.  
Whole Foods Market Tucson-River Road is holding a Dressing Rehearsal for the Holidays! Join in on the fun at one of the events this week!

Info on Dressing Rehearsal Event:

Friday, December 13th from 4-6 pm
Saturday, December 14th from 11 am to 2 pm
Sunday, December 15th from 12 pm to 2 pm

Friday – Sweet and Savory: We’ll be sampling some this season’s hottest items from the Bakery Department and our Top Ten Wines.
Saturday – Holiday Ham Tasting
Sunday – Santa’s Workshop: Let us show you some one of a kind gift ideas, creative ways to wrap your presents and more!

One of the treats that we wanted to be able to provide for our holiday traditions were an assortment of cookies for our Zoo Light adventures, our night traveling the neighborhood looking at lights, and Christmas Eve.  I searched through my favorite clean-eating blogs and came up empty on recipes that worked for our little man.  You see, he is allergic to gluten, eggs, and nuts.  Luckily, I was able to peruse Whole Foods and find that multiple sections of their store is dedicated to certain food allergies and in-tolerances! HIP HIP HOORAY!  Food allergies are beyond scary and being able to count on a company to provide all natural, organic options that are allergy-free made this mom very happy.  

I can make a mean lemon meringue pie from scratch but cookies-yes cookies-throw me for a loop when we get into making them from scratch with all products being allergy-free AND the end product tasting good.  I have yet to be able to make an entirely from scratch batch of cookies that fit all of the aforementioned ingredients.

After many, many failed attempts… this is the winning recipe for our gluten-free, nut-free, and egg-free chocolate chip cookies.

Gluten-Free & Organic

Whole Foods 365 Everyday Value- didn’t know they had a bargain brand?!? Now you do. 

I love the fact that it is comparable in price to my local grocery store BUT it is organic, while the comparable product at my grocer is not. Easy choice. 

Chocolate Chip Cookies:
Gluten-Free, Egg-Free & Nut Free

Ingredient List:

8 Ounces of unsalted butter
2 Cups of brown rice flour
1/4 Cup of corn starch
2 Tablespoons tapioca flour
1 Teaspoon of xanthan gum
1 Teaspoon of salt
1 Teaspoon of baking soda
1/4 Cup of sugar
1 1/4 Cup light brown sugar
2 Tablespoons of coconut oil
2 Tablespoons of whole milk
1 1/2 Teaspoons of vanilla extract
16 Ounces of semi-sweet chocolate chips

1. Heat oven to 375.
2. Stir softened butter, rice flour, corn starch, tapioca flour, xanthan gum, salt, baking soda and coconut oil  in a bowl. Stir until cookie mix forms a doughie consistency.
3.  Then add both of the sugars to the bowl.  Mix well. Finish with vanilla extract while slowly adding in the chocolate chips.
4. Chill the dough in the fridge for approximately one hour-or until firm.
5. Roll the cookies into two inch balls-we(The Toddler) like BIG cookies-place them onto an ungreased cookie sheet, about three-four inches apart.
5. Bake 8-12 minutes or until they are a light golden brown.  Note: allergy-free cookies tend to be a tad lighter in color-while heavier in texture.

Little Life Update

There are many, many joyous occasions I want to share with you. Regretfully, I am waiting for my laptop to arrive so that I can gloriously reminisce about how lovely Thanksgiving, Zoo Lights, and my 29th birthday were. 

Unfortunately, as fate would have it. My laptop died on Thanksgiving- so thankful for the timing with Black Friday shopping. Another unfortunate circumstance is that as I bought the laptop online-when it was shipped it got stuck in the storm. Delivery should have been Monday, last Monday, but now it is next Monday.  I feel behind and am on a crutch with my iPad. 
This morning I begged the husband to stay home. You see, mom’s don’t get sick days. And without any family around I have had to withstand a 103 fever for the last four days. Finally went to the doctor and low and behold I have strep AND a sinus infection. Lucky me. The husband went back to work after three hours home and I am using all of my energy just to make it til 5PM. 
Please know that I will be back into the swing of things soon. As for now I will be counting down the minutes and disinfecting EVERYTHING!
