Our family is stuck in a food rut. I am beyond thankful that we now have more family friendly options when menu planning. As long as you have a few things in the fridge you can whip a variation for your family in less than five minutes. I don’t think I’ve sat down to eat with my kids at lunch(when they started eating) in the history of lunch time. Story of a short-order cook called mom.
Healthy DIY Lunchables
I loved anything that resembled bite-sized sandwiches when I was growing up. Definitely a rare treat in our house and one that I had forgotten about until now. My husband usually makes his own sandwich or eats leftovers for lunch and this spread of supplies for a DIY Lunch was a much needed break from PB&J.

- Butter Crackers
- Swiss Cheese
- Provolone Cheese
Simply slice all of your ingredients into thin little squares that will fit on your cracker. To store for work make sure the supplies are wrapped in separate layers of plastic wrap or sandwich bags or those fantastic re-usable bento boxes. Please store in the company fridge.

Our family makes sure that all of our meals look alike. When I was pregnant I dreamed of us all eating the same meals together at the table, for every meal. The reality of our life is that my strapping young man has a multitude of scary, life-threatening food allergies. There are many times he will be excluded from celebrating with friends and others so we strive to make sure we eat meals that “look” the same. That means that we may not eat meals that used to be our favorite pre-kids save for rare date nights, but we wouldn’t have it any other way.
When I was packing up my husband’s meal both kids watched as meals literally their size were put into the lunch box. They both asked if they could have that special treat for lunch and I readily agreed. Emma Marie devoured a lunch of butter cracker, pear, swiss cheese, salami and black forest ham.

Raymond was more than thrilled at his lettuce wrapped bite-sized lunch. With the minimal amount of work and the incredible output of happy shrills and “thank yous” I know this will be a weekly staple. Raymond enjoyed a lettuce-wrapped provolone cheese, salami, pear, and black forest ham spread.
